Ecuador - Finca El Dorado Green Gesha - Anaerobic Washed Process
This amazing coffee is coming from Finca El Dorado in Loja, Ecuador, which placed 4th in the 2022 Cup of Excellence and 6th place in the 2023 Cup of Excellence.
This coffee is grown around 1750 MASL, and is currently in its third year of production. To achieve the astronomical qualities of this coffee, cherries are picked at the peak of their ripeness, washed, and then floated to remove defects. The whole cherries are then fermented in bags for 48 hours before being depulped and fermented in their mucilage for another 48 hours. Once this second fermentation stage has concluded, the beans are washed thoroughly to remove the mucilage. Post-washing, the beans are placed on raised drying beds and rotated every 8 hours until the beans reach a target moisture content between 9.5% and 11%; this drying process generally takes a minimum of 10 days.
