His Mama Cata Estate, based in Volcancito, Boquete, is renowned for its consistency and excellent quality. Growing predominantly, gesha and mokkita, José’s coffees have excelled in competition settings winning 1st in the BoP varietal category in 2020 and 2021.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis lot utilized cherries from Mama Cata Estate and was processed by TnT Lab using the Flower Touch protocol. The cherries were picked and then transferred to TnT Lab’s facilities where they underwent a 3-day whole cherry fermentation at 9°C. Next, they were then  depulped and fermented again in water for 3 more days. The beans are quickly placed into a dry environment, lifting its acidity and thwarting undesired notes of fermentation. The coffee is then dried for 8–12 days in TnT Lab’s hot greenhouse, until it reaches its desired moisture content. Alfonso, of the TnT team, told me that this coffee was processed on Valentine’s Day, so they dubbed it “Romantico.”\u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis coffee offers a classic Panama washed gesha expression with heightened sweetness.
